Sherwood Bread is a hands-on cooking school in Albuquerque where people come to learn by doing - mixing, shaping, baking, and building real confidence in the kitchen.

As Sherwood grows, we’re inviting a small number of Visiting Chefs & Guest Instructors to teach special workshops alongside our core classes. These sessions bring new techniques, cuisines, and craft traditions into our classroom — without losing what makes Sherwood different: small groups, structured instruction, and a skill-first approach.

Sourdough & Pizza

Tobias

Tobias began baking sourdough in 2014 after a simple craving sparked a deeper curiosity about fermentation. He built his first starter through months of trial and error, refined his technique after discovering Tartine’s Chad Robertson, and has baked in four states using both home and commercial ovens. Now in New Mexico, Tobias teaches bread and pizza, describing naturally leavened bread as half science and half art and he loves the moment someone tastes his bread and smiles.

Lavelle’s Old School Ice Cream

Gerard had been making ice cream for his family for over 40 years. After retiring in 2024 as a District Court Judge, he was looking for an activity to make people happy. His son, Conor Drake-Lavelle, an Albuquerque barber, suggested that nothing makes people happier than eating ice cream. The father-son combo joined their talents, giving rise to the LOS Ice Cream logo that says it all.
