Turn Your Sourdough Starter Into Great Pizza

Making sourdough bread is one thing. Making sourdough pizza that's flavorful, light, easy to stretch, and ready when you want to bake it presents a different set of challenges.

In this hands-on Sourdough Pizza Class in Albuquerque, you'll learn how to make naturally fermented pizza from starter to finished pie and understand how fermentation, time, temperature, and dough handling affect your results.

You'll mix and work with the dough, learn how to recognize when it's properly fermented, stretch it without tearing, and bake your own sourdough pizza.

The goal is simple: give you a repeatable process for making great sourdough pizza at home.

What You'll Learn

  • Prepare and use a sourdough starter for pizza
  • Make naturally fermented pizza dough from scratch
  • Understand flour, hydration, and dough strength
  • Control fermentation with time and temperature
  • Plan your dough so it's ready for pizza night
  • Shape and stretch sourdough pizza dough without tearing
  • Recognize when your dough is properly fermented
  • Bake great sourdough pizza in your home or pizza oven
  • Troubleshoot common sourdough pizza problems

Learn What Good Dough Feels Like

Recipes can tell you how many hours to ferment dough. They can't easily teach you when the dough is actually ready.

During the workshop, you'll work with sourdough pizza dough at different stages of fermentation so you can see and feel the changes yourself.

You'll shape, stretch, top, bake and eat your own pizza while learning techniques you can repeat at home.

What You'll Take Home

  • Sherwood's sourdough pizza recipe
  • A practical pizza-night fermentation schedule
  • Sourdough pizza troubleshooting guide
  • Stretching and baking reference
  • Sourdough starter to continue practicing at home
